Application of Food Hygiene and Sanitation Principles on Food Handlers at The Madang Campus Canteen, Faculty of Medicine University of Sriwijaya

A food handler must know information related to hygiene, sanitation, and nutrition maintain health hygiene so that consumers can avoid the dangers of or drink does not meet requirements. Until now, there are no guidelines stipulate regulations regarding provision safe hygienic beverages in canteens. The design used this research is qualitative with a case study method. sampling method was purposive technique. data were obtained from 1 key informant, five primary informants, four supporting informants who had met inclusion exclusion criteria. analysis content analysis. results application sanitation principles has been carried out by handlers. Still, some discrepancies between theory applicable rules. This concludes applying handlers Madang Campus canteen appropriate theories
